Pumpkin Cookies... the perfect fall treat

Here is my yummy cookie recipe that is wonderful for fall. I love baking these pumpkin cookies to have during harvest!

 

2 cups    whole wheat flour

1 1/2 cups    oats

1 teaspoon    baking soda

1 teaspoon    cinnamon

1/2 teaspoon    salt

1/2 cup    butter

1 cup    brown sugar

2    eggs

1 teaspoon    vanilla

1 cup    honey

1 cup   pumpkin

 

milk chocolate chips

dried cranberries

 

 

Combine flour, oats, baking soda, cinnamon, and salt. Blend butter, and brown sugar together. Add eggs, vanilla, honey, and pumpkin to the mixture. Mix ingredients well. Stir in milk chocolate chips or dried cranberries if so desired. Preheat the oven to 350 degrees. Drop spoonfuls of dough onto cookie sheets. Bake for 10-15 minutes or until lightly browned. Remove cookies from the oven and let cool.

First Day of Fall

Today was the first day of fall! And, it was such a gorgeous day! I enjoyed every moment of it. It was perfect weather for baling hay for the cattle herds. This week, we are finishing baling hay for the year. It has been a long season but good season. We have quality hay to feed cows and calves through the winter.
